Mackerel and museli


4 fillets mackerel
100g sugar-free muesli
Juice of one orange
A little salt and pepper
For the sauce:
Juice of one lemon, one lime, one orange and the grated rind of each.


Bind the muesli, using the orange juice, add parsley and seasoning.
Fill the stuffing into the fillets and place in a lightly oiled dish.
Bake in a moderate oven 190oC / Gas mark 5 for 20-25 minutes.
Heat the sauce gently.
Arrange fillets on serving dish and spoon sauce over.
