Sweet soused mackerel


8 mackerel fillets
1 red onion – sliced
Bay leaves
8 gherkins
For the Marinade:
300ml cider vinegar
300ml cider
Dessertspoon brown sugar
4 cloves
4 all spice berries
4 black peppercorns
A little salt
A few sprigs thyme


Combine the marinade ingredients in a small saucepan and bring to the boil.
Simmer for 10 minutes then allow to cool.
Place a bayleaf and gherkin on each fillet and roll up.
Secure with cocktail stick if necessary.
Arrange fish in a casserole dish, sprinkle onion rings over and then pour on marinade.
Cover and bake in a very moderate oven 150oC/300oF/Gas 2 for 30-35 minutes.
Allow to cool in marinade, refrigerate and chill for 1-2 days before serving.
Serve with apple, celery and walnut salad and mixed leaves.
